One Restaurant, a dream and two very Ambitious Friends.

 

After many many years discussing going into the restaurant business together and years talking over numerous bottles of wine and finally the dream is here.

MD's Italian Kitchen & Bar was born on the back of Family, Friendship and Outstanding Food. We wanted to bring to the city of Brisbane what in our eyes is Rustic Italian Food, a place where you can come by yourself and have a meal and drink, celebrate, have a corporate function or bring the family to sit, relax and take in the ambience and the delicious food. 

With our separate areas such as the bar area, private function room, outside dining with external heaters and our restaurant dining room we can accommodate any small parties and larger groups

-Introducing Giovanni -

My name is Giovanni Allegretti and I am the new Chef of MD’s Italian Kitchen. I've never written a Blog before so just bare with me on this one.
 
I began cooking over 25 years ago at home in Italy, when I was a young boy, around 10 years old. I would go to my Nonno and Nonna’s farm in the countryside of Campania where I used to make fresh bread, cheese and ricotta every morning.
 
Campania is best known around the world for its pizza. Campania's exuberant cuisine relies on sun-kissed vegetables and herbs, salty capers, dried pasta, and fresh farmhouse cheeses (chief among them being water buffalo's Mozzarella). 
 
I was in and out of the farm kitchen regularly growing up and watching over everything my Nonna did in the kitchen. 
 
One can never really learn everything from their Nonna, one can only stand in awe of their passion and the love they show for not only their family but in the way they cook. My Nonna inspired me into cooking rustic delicious food full of flavours and passion. Trying to learn dishes, for example her Lasagne, is out of this world and trying to replicate that is almost impossible. She has decades of knowledge behind her, passed down from generation to generation. 
 
My family is brought together by the love for family and for the love of food. In my family the women do the cooking and the men organise all the wine. My Nonna wakes up at 4am to make fresh, decadent ragu’s packed full of flavours and aromas. 
 
Being in the country, every dish we make are made using fresh local produce which brings the entire family together around tables full of cheese, meats, wine, pasta, risotto and so much more. 
 
When I was 16 I began working in a commercial kitchen as an apprentice chef. Over the years I developed many skills in many different cuisines and eventually cemented myself in what I knew best which was dishes full of the flavours of full-bodied Italian food. 
 
Throughout the years I learned many skills and travelled throughout Italy, Europe and Australia, working in many different restaurants throughout Europe and Australia. I then came to Brisbane 5 years ago and fell in love and decided to stay. 
 
One of my favourite dishes to make is really any type of risotto; I like the fact that it is a long process full of love, patience and passion. If you do not have passion for what you are making then what is the point in cooking? Customers can taste when food is made with fresh ingredients and love, it changes the flavours and textures. 
 
What inspired the new menu is exactly that but it is also a combination of my taste buds based on traditional Italian cuisine and a mixture of Australian flavours, bringing a modern Australian feel to traditional rustic dishes.

Came here for a date night with my partner. had the arancini balls and meat balls for entree which were both excellent, then shared pizzas for main which were super tasty too. great value and great flavour!

This tucked away restaurant is fabulous and the service is even better! We were greeted by a super cheery guy who instantly made us feel welcome. We ordered bruschetta, a margarita pizza and the pesto gnocchi and all were superb. The bruschetta was one of the best out there. Both the pizza and gnocchi were delicious. Not a single fault. The portions were very generous. We finished off the meal with the panna cotta - which was divine! All in all a 10/10 experience. I will be telling everyone about this gem of a spot, and I certainly will return!

Have been here twice now, and both times we enjoyed fantastic food and a great atmosphere. Went to the Sunday sesh on the weekend and would recommend to go again, we were so full and it was great value. Well done MDs, we will be back again soon :)
